I think you raise a really good point about some of the more difficult aspects of using technology in education. The programs that are out there that are designed for educators often have limitations (in your case, weebly restricts creativity), but the programs that have fewer limitations in terms of creativity and the "cool" factor limit the teacher's ability to oversee and monitor students' work. Perhaps you could require students to share their usernames and passwords? Or use googlesites and include you as a collaborator?
